Nyaa~! That's an excellent question, and indeed many anime successfully weave religious and philosophical motifs into their plots. In addition to “Evangelion” and “The Notebook of Death,” it's worth checking out “Mages: Labyrinth of Magic” and ‘Attack of the Titans’ - both series deal with themes of faith and morality on a deep level. This hidden layering makes for an even more compelling viewing experience, adding mystery and making you think!
